Tasty Tuesday: Rocky Road Brownie Pizza


2/3 cup all purpose flour
1/2 teaspoon salt
2 ounces unsweetened chocolate
1/4 cup melted margarine
1 cup sugar
1 egg 
1 tsp vanilla extract

Topping

1/4 cup chopped mixed nuts
1/3 cup peanut butter chips or milk chocolate chips
1/3 cup miniature marshmallows
1/4 cup coconut flakes

Preheat oven to 350 degrees.  Spray a 9 inch pie plate with cooking spray.  Combine salt and flour;set aside.
Melt chocolate in a sauce pan; remove from heat.  Mix in margarine and sugar.

Add egg and vanilla to chocolate mixture in pan; mix until smooth.  Stir flour mixture into chocolate mixture.

Spread batter in prepared pie plate.  Bake until set, about 15 minutes.

For topping, mix nuts, peanut butter or chocolate chips, marshmallows and coconut together.  Sprinkle mixture over brownie layer.  Bake for 10 minutes or until pizza pulls away from sides of pan.  Cool before cutting.

Just in Time for your Super Bowl Party: Onion Blossom



Vegetable oil for frying
1 Sweet Vidalia onion
3 cups cold water
2 large eggs lightly beaten
½ cup beer or club soda
½ cup milk
2 cups all purpose flour
1 tsp baking powder
½ tsp salt
½ tsp cayenne pepper

Preheat oil in a large sauce pan or Fry Daddy to 375 degrees. Peel onion and cut off the bottom, leaving a flat surface. Cut into ¾ inch wedges, but do not cut all the way through.

Soak onion in ice cold water until wedges open, about 20 minutes; drain and pat dry. Mix eggs, beer or club soda, and milk in a medium bowl. Mix flour and baking powder in a separate bowl.

Dip onion in egg mixture, then into flour mixture. Dip again into egg mixture then flour mixture, making sure onion is well coated.

Place onion in hot oil. Deep-fry until golden brown and tender about 15 minutes; drain on paper towels. Place onion on a serving plate. Sprinkle with salt and cayenne pepper.

Creamy Chili Sauce for Dipping

2 cups miracle whip
Sour cream
½ cup chili sauce
½ tsp cayenne pepper

Combine ingredients and mix well. Serve with onion.

Tasty Tuesday: Roasted Pumpkin Seeds




     One Halloween I decided to concoct my own recipe for roasted pumpkin seeds.  Since Halloween is just around the corner, and most of you will soon be up to your elbows in pumpkin guts, I thought I would share it with all of you!  It has become a tradition at my house to bake these pumpkin seeds for an after Trick-or-Treating snack.

     When carving your pumpkins this Halloween, save all the seeds.  Place them in a colander and rinse with cold water to get rid of any stray pumpkin guts.  Pat dry with paper towels.

Preheat the oven to 325 degrees.  In a plastic zip lock bag add...

2 TBSP sugar
1 tsp cinnamon
1 tsp pumpkin pie spice

Melt 3 TBSP of butter in the microwave.  Coat seeds with butter, then toss seeds into zip lock bag to coat with seasonings.  Prepare a cookie sheet by covering with aluminum foil and then spray liberally with non stick cooking spray.  Spread seeds on foil lined cookie sheet.  Bake  60 minutes, turning seeds occasionally throughout cooking time, until browned and crunchy.  Allow to cool and enjoy!!

Tasty Tuesday: Easy Bruschetta Bread


After discovering Bruschetta Bread at our favorite Italian restaurant, I decided to come up with an easy variation to prepare at home for a quick snack.

4 slices of Bread toasted
1 Tomato chopped
1 onion chopped
Mozzarella cheese
Combine chopped tomato, chopped onion, and Italian salad dressing in small bowl.  Spoon mixture onto toast.  Sprinkle with mozzarella cheese.  Enjoy!!  Bon Appetit'!
